Й.Turkish restaurants are actively gaining popularity among consumers in different regions of the world. In recent decades, this trend has been most dynamic in the capitals and major tourist cities of Europe. The Eastern European region is a promising market for investment in the development of the infrastructure of Turkish restaurants. The purpose of the article is to analyze the potential and trends in the market of Turkish cuisine restaurants in Kyiv, one of the representative cities of Eastern Europe, and outline the Post-Covid-19 trends in the transformation of the city’s restaurant business. The capital of Ukraine has been developing as a powerful air hub and center of international tourism, including gastronomic tourism. Since 2014, the share of Turkish cuisine in the structure of the city’s HoReCa sector has been steadily growing. The Covid-19 crisis has become a powerful challenge for the restaurant business. The authors’ research highlights the trend: since the summer of 2021, Turkish restaurants in Kyiv have been showing the highest rates of recovery of Pre-Covid-19 potential both in terms of the number of operating enterprises and the volume of customer turnover. Й.This chapter is devoted to the issue of entry and activity of European low-cost airlines in the Ukrainian market. Ukraine, with the largest territory and population in Eastern Europe, is an important partner of European countries. The rapid development of air transportation between Ukraine and European countries in the 21st century is based on two factors: 1) high tourist interest in the historical and cultural heritage of Europe and 2) communication of migrant workers, the number of which is steadily growing. The authors reveal the specifics of the entry and development by European airlines of market niches of low-cost transportation in Ukraine in 2008-2021. In particular, the activities of airlines are considered: Ryanair, Wizz Air, German Wings, Meridiana, Ernest Airlines, Vueling Airlines, AegeanAir, Air Baltic, Austrian Airlines, and others. Й.This chapter is devoted to the issue of post-COVID-19 revitalization of the restaurant industry in Lviv – one of the most representative tourist cities in Eastern Europe. Lviv is a fashionable and inexpensive destination of international gastronomic tourism. The modern restaurant industry developed in Lviv until 2020. Statistical trends of losses of the city’s restaurant industry, in 2020 to the the first half of 2021, are unprecedentedly: 27% of establishments were closed; more than 55% of staff lost their jobs. However, the status of the cultural and tourist capital saved the restaurant industry of Lviv from collapse. Thanks to the acquired image and promotional campaigns in 2020–2021, domestic tourists actively visited Lviv during periods of easing of quarantine restrictions and enjoyed original local gastronomic products. The strategic goal in the post-COVID-19 era is to complete the transformation of the traditional business partnership into an updated smart hospitality cluster in Lviv.Item type:Item, Waterfalls of the eastern Carpathians (Ukraine) as objects of geoheritage and geotourism(Geografický ústav SAV, 2021) Rutynskyi, M.; Kushniruk, H.; Рутинський, М. Й.The aim of the paper is to cover the results of the study of mountain waterfalls in Ukraine in the context of assessment of the state and problems of geoheritage preser-vation and geotourism development in the Eastern Carpathians. The state of tourist infrastructure near waterfalls was analyzed in the study. For the first time the tendency and share of attraction of waterfalls by tour operators in programs of thematic geotours and mass excursion tours in the Carpathians were analyzed. A number of expert re-commendations have been developed for regional authorities on the protection of wa-terfalls through the further development of the geoheritage network (opening small geoparks and local geodestinations with the status of “protected tracts”), the inclusion of attractive waterfalls in the branding and PR-promotion of values, routes and trails of sustainable geotourism in the Eastern Carpathians. Cieľom práce bol výskum horských vodopádov na Ukrajine v kontexte hodnotenia ich stavu a problémov súvisiacich s ochranou geodedičstva (geologické a geomorfologické dedičstvo; angl. geoheritage) a rozvojom geoturizmu vo Východných Karpatoch. V štúdii boli použité nasledujúce metódy: špecializované metódy terénneho geomorfo-logického a krajinného mapovania, estetický index krajiny, štatistické vyhodnotenie náv-števnosti vodopádov počas turistickej špičky (víkendy), dokumentácia prejavov degradácie krajiny v dôsledku turizmu. Vykonaný bol taktiež sociologický prieskum medzi laickými návštevníkmi a reprezentantmi organizovaných turistických skupín. Pre potreby analýzy z hľadiska ich geoturistickej hodnoty a atraktivity boli vodopády aplikovaním Wardovej metódy začlenené do troch klastrov. Výsledkom práce je klasifikácia vodopádov daného regiónu vyplývajúca z ich hodnoty z hľadiska geodedičstva a geoturizmu. Okrem toho bola zdokumentovaná závažnosť prob-lému nadmernej návštevnosti najznámejších vodopádov Východných Karpát v čase turistic-kej špičky. Й.From the time of their establishment to the outbreak of World War II, resorts on the territory of modern Ukraine and Poland were frequented by substantial segments of those countries’ Jewish populations. The recreational activity of Jewish patients and the investments of Jewish entrepreneurs made a significant contribution to the development of resort infrastructure on the territory of present-day Ukraine. This study examines the spa resort of Morshyn, one of Ukraine’s five leading health resorts and is the result of many years of research carried out by the authors.Item type:Item, Coffee tourism in Lviv in the сontext of world сoffee tourism(UMCS, 2020) Rutynskyi, M.; Kushniruk, H.; Рутинський, М. Й.In recent years, the interest of tourists in one of the forms of gastronomic (culinary) tourism – coffee tourism – has been growing in Lviv. It develops on the basis of interesting recipes created over many decades, the traditions of making, serving and tasting of coffee, as well as famous coffee houses. The paper describes the stages of development of coffee tourism in Lviv from the nineteenth century to 2020. The concepts and defi nitions related to this form of tourism are discussed. The target audience of coffee tourism is identifi ed. Features and important elements of the resource base for the development and functioning of coffee tourism in Lviv are characterized. Particular attention is paid to the activities of the local community and business, which work together on a strategy for the development and promotion of specialized infrastructure, tourist products – specialized goods and services, as well as coffee tourism events. The aim of this strategy is to create a comfortable urban hospitality space that will be welcoming to both citizens and tourists; presentation to the world of more than two hundred years of multiethnic coffee culture of Lviv and the unique coffee urban environment of the city whose historical center is included in the UNESCO World Heritage Site. The article summarizes representative statistics, data on the state of the coffee tourism offer in Lviv, and discusses the results of a survey on the functioning of coffee tourism in Lviv. W ostatnich latach we Lwowie wzrosło zainteresowanie turystów jedną z form turystyki gastronomicznej (kulinarnej) – turystyką kawową. Jest ona rozwijana nie tylko w oparciu o ciekawe, opracowywane przez wiele dekad receptury i przepisy dotyczące przygotowania oraz serwowania kawy, lecz także przez słynne kawiarnie.W artykule opisano etapy rozwoju turystyki kawowej we Lwowie od dziewiętnastego stulecia do 2020 r. Omówiono koncepcje i pojęcia związane z tą formą turystyki, zidentyfi kowano grupy docelowe zainteresowanych nią osób. Scharakteryzowano też cechy i ważne elementy zasobów wykorzystywanych do rozwoju turystyki kawowej we Lwowie oraz sposób jej funkcjonowania. Szczególną uwagę zwrócono na działania lokalnej społeczności i branży, współpracujących na rzecz opracowania strategii rozwoju, obejmującej promocję, rozszerzanie specjalistycznej infrastruktury, kreowanie produktów turystycznych – specjalistycznych towarów i usług, a także wydarzeń związanych z turystyką kawową. Celem tej strategii jest stworzenie jak najlepszych – przyjaznych zarówno dla mieszkańców, jak i dla turystów – warunków pobytu, umożliwiających zaprezentowanie na skalę światową ponad dwustuletniej wieloetnicznej kultury kawowej Lwowa, osadzonej w jego historycznym centrum wpisanym na listę światowego dziedzictwa UNESCO. W artykule zestawiono reprezentatywne dane statystyczne i dane dotyczące stanu oferty turystyki kawowej we Lwowie oraz omówiono wyniki badań sondażowych dotyczących funkcjonowania turystyki kawowej we Lwowie.
